This month, W Bali – Seminyak‘s Brunch Series welcomes Masonry for a one-day culinary collaboration at Starfish Bloo. Bringing its signature fire-led cooking to the shores of Seminyak, Masonry will join W Bali’s vibrant Sunday Brunch with a selection of Mediterranean-inspired dishes that celebrate bold flavours, quality ingredients, and the art of cooking over fire.

The collaboration features signature dishes including Whole Rolled Pork Loin with green harissa and pickled onion; Roasted Barramundi Fillet with Sauce Grenobloise, finished with burnt butter, capers, herbs, lemon, and croutons; Watermelon Salad with Persian feta, black olive, roasted onion, and basil; and Potato Gratin with caramelized fennel and cheddar.

Leading the kitchen is Group Head Chef Simon Polkinghorne, who brings over two decades of experience gained across some of Melbourne’s most respected kitchens, with a culinary foundation rooted in fine dining, classic technique, and ingredient-led cooking. At Masonry, he takes a refined yet relaxed approach, combining premium local and imported produce with thoughtful, from-scratch cooking. His expertise in both culinary craft and kitchen operations plays a key role in shaping Masonry’s distinctive identity in Bali.

Set against the ocean views of Starfish Bloo, the collaboration brings together Masonry’s wood-fired Mediterranean character and W Bali’s signature Sunday Brunch energy for a memorable afternoon by the sea.
