For two nights only, on 23 and 24 August 2024, Alila Villas Uluwatu’s Executive Chef Derrick Walles will join forces with Korean culinary artist Chef Hahn Na Rae from BanJoo 반주 Jakarta to present an exquisite gastronomic experience with a modern Korean influence. The event will be the first in the resort’s “Queens of the Kitchen” culinary diva series, which will feature exciting collaborations starring some of the most prominent female chefs in Indonesia’s culinary scene.

Born in Seoul and brought up in Vienna, Austria, Chef Na Rae is known for her innovative approach to Korean flavours, grounded in a deep appreciation for her Korean heritage through her mother's traditional cuisine. Inspired by the joy her mother's cooking brought to guests, Chef Na Rae opened three successful restaurants in Seoul.

 

 

Currently based in Jakarta, she is the mastermind behind BanJoo 반주, a modern Korean restaurant that blends traditional recipes with contemporary culinary techniques. She also curates exceptional private dining events through NARAE KITCHEN, delighting guests with meticulously crafted personalized menus.

Chef Na Rae’s inventive fusion of Korean heritage and global influences will be on full display in the upcoming four-hands collaboration with Chef Derrick. Together they will present a degustation menu inspired by the dinners Chef Narae often prepares for Korea’s chaebol families, showcasing premium and sustainably sourced ingredients.

 

 

The evening will begin with a selection of canapés, including perfectly finessed bites such as Kimchi Squid Jeon and traditional Korean savoury pancake. Then follows a carefully crafted journey of flavours, traversing the freshness of Korean Raw Fish Ceviche and Tuna and Hamachi Crudo, the richness of Mascarpone Scallop and Lobster Ravioli, and the tenderness of Wagyu Tenderloin and Abalone Steak.

The dessert selections are infused with inspiration from both Korea and Bali, including traditional chapssal sticky rice cake and berries sourced from Bedugul in Bali’s central highlands, rounding out a stunning symphony of flavours.
