
As part of Ubud Food Festival 2025, COMO Uma Ubud is set to host a special evening that brings together the soulful elegance of Italian cuisine with the cultural richness of Bali. For one night only, Chef Alessandro D’Amico of Amici Bali takes over the kitchen at Uma Cucina on Friday May 30th 2025 from 6.00pm to 11.00pm, presenting a thoughtfully curated four-course menu alongside à la carte highlights, in a celebration of place, passion, and flavour.
Chef D’Amico, whose culinary journey began on the sun-drenched shores of Sicily, brings with him a philosophy that marries tradition with a contemporary edge. His approach is rooted in honest ingredients, elevated through precision, story, and a touch of Sicilian warmth. The evening begins with a classic Italian aperitivo, inviting guests to settle into the relaxed charm of Uma Cucina before embarking on a journey through the flavours of Italy.

The set menu opens with Uovo 62° e Tartufo, a slow-cooked egg paired with Pecorino cheese cream, wilted spinach, and fragrant Italian black truffle—a rich and comforting start. This is followed by Ravioli alla Vaccinara, where house-made pasta envelopes a slow-cooked Wagyu Tokusen oxtail ragù, finished with Taleggio cream and a light kale foam. For the main course, Filetto di Barramundi takes the spotlight—tender barramundi fillet enriched with Pecorino Romano DOP cream, saffron, and a touch of black pepper. The meal concludes with Spuma al Cioccolato, a refined dessert featuring salted caramel gelato and Callebaut dark chocolate foam, offering a final note of indulgence.
In addition to the tasting menu, a refined à la carte selection will be available, including standout dishes such as Vitello Tonnato—slices of Wagyu chuck tender with creamy tonnata sauce and caper fruit; Tagliatelle Cozze e Vongole—homemade tagliatelle with black mussels, clams, and tomatoes; and the indulgent Wagyu Tokusen Ribeye, grilled to perfection. Desserts such as the Torta Tenerina, a rich chocolate and almond cake, and a classic tiramisù round out the offerings.
Wine pairings will be thoughtfully selected to complement each course, enhancing the flavours and elevating the experience.

Seats are limited to just 60 guests, and reservations are recommended early, as availability is on a first-come, first-served basis. The four-course menu is priced at IDR 700,000++ per person.
