This October, Alila Villas Uluwatu presents the second event of its Culinary Diva series designed to celebrate the finest female culinary artisans with exquisite gastronomic experiences. The resort’s Executive Sous Chef Ananta Putra will collaborate with renowned Indonesian Chef Marinka, to create a four-hands epicurean feast on 18 and 19 October 2024 at The Warung restaurant.

Hailing from Jakarta, Chef Marinka started out pursuing her twin passions for food and fashion before graduating from Le Cordon Bleu Australia and deciding to pour her heart into the art of cooking. In 2015, she opened Mars Kitchen in Jakarta, offering healthy modern fusion cuisine. This multi-talented chef is also a familiar TV personality having appeared in numerous cooking shows, including as a MasterChef Indonesia judge.

 

 

“Tenun Rasa” expresses the exquisite weaving together of flavours that awaits at this exclusive event. The masterfully crafted menu will feature locally sourced, organic ingredients, embodying eco-conscious artistry and sustainable fine dining, transporting guests on a luxurious journey through the Indonesian archipelago’s diverse regional flavours.

The culinary journey begins with starters of Gohu Ikan, a lavish ceviche featuring Indonesian fresh catch of the day enveloped in a spicy sour dressing, and Mie Tempe, artisan soybean cake noodles with soybean chips, a refined Balinese soy broth and marinated free-range egg chicken. Palates are then cleansed with an elixir made from a blend of lush Bedugul strawberries and exotic ginger flower, fermented to produce a refined and refreshing kombucha.  

A selection of five mains follows, crafted for sharing. They include Sapi Bacem, a tender beef dish that is a celebration of Semarang culinary legacy, Bebek Lodho, an impeccable slow-cooked duck roulade offering an opulent taste of Trenggalek cuisine, and Gurita Bakar Pala, an East Nusa Tenggara marinated grilled octopus complemented by smoked nutmeg potato, garlic sambal and Dabu-Dabu salsa.

A duo of desserts brings the meal to a sweet conclusion. Kue Talam Labu Kuning layers the flavours of golden coconut, pumpkin and pandan, while Tape Manis delights with a creamy cheesecake infused with sweet fermented cassava and Baturiti berries.

 

 

Each course is accompanied by a choice of mocktail or wine pairings, thoughtfully curated to enhance the exquisite symphony of flavours on the plate.

Culinary Diva Vol. II: Tenun Rasa will take place at The Warung for two days only, on 18 and 19 October, from 6.00pm. Dinner is available at IDR 1,650,000++ per person including mocktails and IDR 2,500,000++ per person with wine pairing.
