What is the Dubai chewy cookie?

Somewhere between a cookie, a chocolate truffle, and candy, this treat was first created by South Korean pastry chef Kim Na-ra of Mond Cookie in Gimpo-si. It quickly became a sensation in South Korea, with people lining up just to get a taste. Even Starbucks in South Korea joined in, launching a “Dubai chewy roll” and limiting purchases per customer to keep up with demand.
At first glance, you might think the chewy outer layer is made of mochi, especially with how it stretches when pulled apart. But the texture actually comes from a marshmallow coating. Inside, you’ll find a mix of kunafa and pistachio cream.
