The Westin Resort Nusa Dua, Bali proudly celebrates bartender Deni Alan Hartono, who has been crowned Indonesia's winner of the Marriott International Sustainable Bartender Championship Indonesia & Malaysia 2026 with his original cocktail, Segara Alchemy. Inspired by Bali's coastline and built on a philosophy of sustainability, the cocktail earned Deni the opportunity to represent Indonesia at the upcoming Marriott International APEC Sustainable Bartender Championship, where he will compete alongside the region's top bartenders.

A Story Inspired by Bali's Coastline
Segara Alchemy was born from an idea: to bring together the ocean, the coastal spirit of Ikan Restaurant & Bar, and sustainability in one meaningful cocktail.
Inspired by Bali's coastline, Deni wanted to create a drink that captures the feeling of being by the sea, refreshing, vibrant, and effortlessly inviting. Much like Ikan Restaurant & Bar itself, the cocktail celebrates the island's coastal heritage while embracing a more thoughtful way of creating, where every ingredient is valued and nothing is overlooked.
Rather than focusing solely on flavor, Segara Alchemy tells a story of transformation. It reflects how ingredients that might otherwise be discarded can be reimagined into something refined and memorable, demonstrating that sustainability is not about limitation, but about creativity and purpose.
The name Segara Alchemy perfectly embodies this philosophy. Segara, meaning "ocean" in Balinese, pays tribute to the island's enduring relationship with the sea, while Alchemy represents transformation, the art of turning overlooked ingredients into something extraordinary. Every sip is designed to evoke the freshness of Bali's ocean breeze, balanced with layers of complexity that invite guests to experience the island from a new perspective.
The result is a cocktail that is crisp and fizzy, layered with bright citrus, delicate smoke, subtle umami, and a clean, refreshing finish, evoking the feeling of Bali's ocean breeze in every sip. To bring this vision to life, Deni gently washes Absolut Elyx Vodka with smoked cakalang oil from Ikan Restaurant & Bar's kitchen before layering it with repurposed ingredients, creating a cocktail that seamlessly blends sustainability, coastal flavors, and modern mixology.

Organized by Marriott International, the Sustainable Bartender Championship celebrates creativity, local storytelling, and sustainable innovation.
This year's competition, themed The Future Larder, challenged bartenders to create cocktails that combine future-forward ingredients with operational sustainability, commercial performance, balanced flavor, and exceptional presentation.
Following his victory as Indonesia's winner, Deni will advance to the APAC Finals to represent Indonesia alongside Marriott International's leading bartenders from across Asia Pacific, where he will present his award-winning cocktail, Segara Alchemy.
