As the Executive Chef of Amarterra Villas Resort Bali Nusa Dua, Autograph Collection, Ari Pramana has been through a culinary journey spanning some of the most prestigious luxury hotels and resorts. Chef Ari began his formal training at Oberoi Central Learning and Development (OCLD) in 2010, before refining his skills in renowned restaurants across India and taking on leadership roles at The Oberoi Bali and Lombok, as well as Alila Villas Uluwatu as Executive Sous Chef, working alongside acclaimed Chef Marc Lorés Panadés. Drawing inspiration from his Indonesian roots, Indian influences, and modern Western techniques, Chef Ari is passionate about creating dishes that blend tradition with innovation.

 

 

How did you get into the culinary industry?

I’ve been passionate about cooking since my junior high school days. While my initial start in the hospitality industry was in bar training, I found myself drawn to the creative energy of the kitchen. I realized that my true calling was in crafting flavors and experiences through food, so I took a leap of faith and pursued my passion for cooking.

Where do you draw inspiration for your cooking?

Many of my dishes are inspired by the flavors of my childhood. I love infusing my menus with the comforting, nostalgic tastes of home, bringing my personal experiences to life through my cooking. It’s about bridging memories and flavors, reinterpreting them in a way that resonates with guests while staying true to my roots.

What message do you want to convey with your food?

I want my food to evoke comfort, warmth, and a deep sense of culture. Every dish I create carries a part of my background, a reflection of where I come from. Food is more than just sustenance—it’s a way to tell a story, to connect people, and to create lasting impressions.

 

 

What dishes would you recommend to first-time guests?

Without a doubt, I’d recommend trying our Rendang—it’s a must-have on our menu. And
personally, one of my favorites is Nasi Goreng Kambing—a rich, flavorful dish that embodies the essence of Indonesian cuisine.

What has been the most memorable or rewarding moment of your career?

One of my proudest moments was the Grand Opening of Maja Restaurant, seeing all the hard work come to life. Another unforgettable experience was cooking non-stop for 24 hours for a big, prominent family’s flight catering when they visited Bali. Preparing multiple meals to meet their exact requests—lunch, dinner, supper, and breakfast—was an incredible challenge, but also a testament to the dedication and precision that great hospitality requires.

What advice would you give to those who want to enter the culinary industry?

Work hard, never give up, and always keep an open mind. Great food is created through constant refinement, learning from mistakes, and paying attention to every detail until all the elements blend perfectly together. Success in this industry comes from trial and error, perseverance, and a willingness to grow. Most importantly, embrace feedback—it’s the key to evolving and becoming the best version of yourself as a chef. Only through passion, dedication, and continuous learning can you truly shine in the culinary world.
