Amici Bali proudly presents an exclusive culinary collaboration with the iconic Ceretto winery of Piedmont, Italy. On Friday, 20 June 2025, guests are invited to an intimate, one-night-only wine dinner, beginning sharply at 8PM, where refined Italian cuisine meets the elegance of organic winemaking.

This five-course experience, thoughtfully crafted by Head Chef Alessandro D’Amico, highlights seasonal ingredients and precise Italian techniques, elevated by a curated selection of Ceretto’s finest organic labels.

The evening begins with Capasanta ai Quattro Sapori — a delicately seared scallop paired with four distinct sauces: oyster, clams and mussels, Mediterranean, and chimichurri — matched with Ceretto Langhe Arneis “Blangé” 2023. The second course, Ravioli di Guancia, features handmade braised Wagyu Tokusen MB5 cheek ravioli finished with pumpkin foam and a red wine–balsamic reduction, paired with Ceretto Barbera d’Alba “Piana” 2022.

A saffron-kissed Risotto allo Zafferano, complemented by green asparagus and beef jus, follows — paired with Ceretto Langhe “Monsordo” 2021. The main course, Cube Roll e Caviale, showcases grilled Wagyu Tokusen MB6 topped with Oscietra caviar, served with “millefoglie” potato and spinach cream, alongside the prestigious Ceretto Barolo DOCG 2019.

To conclude the evening, guests will enjoy Il Bacio — a refined almond and chocolate cake with hazelnut insert and homemade vanilla-rum gelato — paired with the elegant Ceretto Barbaresco “Asili” 2020.
