
A new chapter unfolds at Starfish Bloo, W Bali – Seminyak‘s iconic beachfront dining destination. The restaurant unveils a refreshed culinary direction, where Mediterranean cuisine is reimagined with an Asian flair—bringing a new depth of flavor, contrast, and creativity to the table.
Long known as one of Bali’s most iconic Sunday brunch destinations, Starfish Bloo evolves with a menu that feels more elevated yet effortless. Rooted in Mediterranean tradition and layered with Asian influences, each dish is crafted to balance richness and brightness, familiarity and surprise, creating a dining experience that feels both refined and refreshingly new.
The menu presents a refined celebration of the ocean, thoughtfully composed to balance indulgence with discovery. Seafood platters set the tone, featuring vibrant raw selections such as spicy tuna, ceviche limeño, seabream crudo, ponzu scallop, and prawn sashimi, alongside more offerings including Lombok oysters, rock lobster, clams, king prawns, and Hokkaido scallops, complemented by smoked butter, mignonette, and subtle touches of spice. A mixed selection brings these elements together in a seamless interplay of freshness and richness.
Beyond the sea, dishes are designed to be shared or savored individually, each offering a balance of depth and brightness. The braised beef cheek is slow-cooked to melting tenderness, layered with gentle ginger warmth and paired with mantou and a vibrant Asian slaw. Butterflied prawns are finished with a delicate Dover lime jus, enhancing their natural sweetness, while the dynamite salmon maki introduces a bold, contemporary note that is both rich and satisfying.
The exotic pavlova offers a light yet expressive finale. Crisp meringue gives way to mango–passion sorbet, uplifted by fragrant kaffir lime and rounded with coconut, for a finish that is both refreshing and elegantly balanced.
“At Starfish Bloo, we wanted to approach the menu from a different angle, something fresher and more dynamic,” shares Steven Peter, Executive Assistant Manager of Food & Beverage and Culinary. “This evolution is about elevating the experience to the next level while staying true to bold flavors and quality ingredients.”
This new chapter is shaped alongside Executive Sous Chef Jules Winckler, who returns to W Bali – Seminyak with a perspective defined by global influence and Parisian precision, deeply rooted in Mediterranean culinary traditions. Having built his foundation across regions in France before expanding his experience in Bali and Dubai, his approach is instinctive yet refined, blending discipline with creative freedom.
“My approach has always been about evolution,” shares Jules Winckler. “Working across different places taught me to adapt, to take inspiration from each culture, and turn it into something personal. At W Bali – Seminyak, there’s a strong creative energy, and this next phase is about pushing that further. The dishes are more expressive and layered, with a modern touch in presentation, but always grounded in flavor. It must taste as good as it looks, and it must stay with you.”
