
The Meru Sanur and Bali Beach Hotel The Heritage Collection proudly present Gastronomic Artistry at Seaside Jazz Mantra, an extraordinary culinary and musical evening uniting the mastery of two celebrated chefs, Chef Pierluigi Gallo, Michelin-starred Chef of Achilli al Parlamento in Rome, and Chef Marco Medaglia, Executive Chef of The Meru Sanur and Bali Beach Hotel The Heritage Collection. Guests are invited to savor an exquisite six-course wine-pairing dinner featuring a harmonious blend of Italian finesse and global inspiration, accompanied by a live jazz performance by the Koko Harsoe Quartet, curated by the Ubud Village Jazz Festival.
The highlight will be Chef Pierluigi Gallo, whose culinary journey began in his family’s trattoria in Abruzzo, Italy. A graduate of the Accademia Niko Romito and former head chef of Rome’s Giulia Restaurant, Chef Gallo now leads the kitchen at Achilli al Parlamento, where his creative vision recently earned the restaurant a Michelin star in 2025. The evening will also feature Chef Marco Medaglia, an Italian-born culinary artist with global experience spanning Los Angeles, Hong Kong, Dubai, and Indonesia, brings a deep respect for authenticity and taste. His ingredient-driven approach highlights both local and international influences, creating refined dishes that speak of craftsmanship and cultural connection.
Following the success of the first Seaside Jazz Mantra on 30th July 2025, collaborating with Michelin-starred Chef Melvin Chou and performance from Bojan Cvetković Quartet, this upcoming edition continues to celebrate the seamless fusion of gastronomy and music by the sea, an evening where taste, sound, and artistry unite under the stars.
