In collaboration with South Australia’s esteemed Thorn-Clarke Wines, CIRE restaurant at Alila Villas Uluwatu presents an exclusive evening of fine dining and exceptional wines on 18 September 2024. Join us for an exquisite five-course dinner crafted by Executive Chef Derrick Walles, expertly paired with a curated selection of Thorn-Clarke wines to create a stunning symphony of flavours.

Thorn-Clarke Wines is a family-owned winery that has been producing wines in the world-famous Barossa region of South Australia for six generations, dating back to the 1850s. The estate cultivates a number of wine varieties across four vineyards in the prime Barossa and Eden Valleys that reflect the distinct characteristics of the various terroirs

In the intimate, sophisticated setting of CIRE, overlooking panoramic ocean views, diners can savour an exceptional dining experience featuring an internationally inspired menu, meticulously crafted from fresh seasonal and premium produce. Each delectable dish will be complemented by a wine handpicked and presented by Peter Kelly, Thorn-Clarke’s Chief Winemaker.

A passionate winemaker and educator, Peter honed his craft at several iconic South Australian wineries before joining Thorn-Clarke in 2016, where he enjoys making both classic Barossan styles and the more nuanced Eden Valley wines.

The evening will begin with appetisers paired with a light-bodied Sparkling Pinot Noir Chardonnay and a Riesling from Thorn-Clarke’s Sandpiper range, named after the migratory bird that visits its vineyards annually. These give way to mains such as Duck 2 Way and Wagyu Tenderloin accompanied by full-bodied wines, including the estate’s flagship Ron Thorn Shiraz, a single-vineyard Shiraz made from the best fruit and produced only in exceptional vintages, crafted as a tribute to a beloved member of the Thorn-Clarke family.

Bringing the meal to an elegant finale is a delightful dessert showcasing cocoa from Bali’s Jembrana Regency, paired with the crisp and refreshing notes of a Blood Orange Sparkling Brut Spritz.
