In celebration of World Food Day, COMO Uma Canggu, in collaboration with MODENA Culinaria, presents COMO Journey: Taste of the Land, a two-day programme from October 16th to 17th 2025 that unites purpose and creativity through food. More than a celebration of flavour, the event is a reflection on the shared responsibility of shaping a more sustainable and equitable future —one that honours the land, empowers communities, and redefines the way we experience nourishment.
Rooted in COMO’s philosophy of mindful living and MODENA’s commitment to innovation, COMO Journey: Taste of the Land unfolds across a series of experiences — from engaging dialogues and live culinary showcases to an elegant six-course dinner inspired by Bali’s natural abundance.
The Collaboration: A Story of Purpose and Innovation
COMO Journey: Taste of the Land is built on a simple yet profound idea: that culinary excellence and sustainability are not opposing forces, but partners in progress. The collaboration between COMO Uma Canggu and MODENA Culinaria highlights this harmony, bringing together chefs, advocates, and industry leaders to inspire both reflection and action.
Over two days, guests will witness a Mystery Box Chef Battle Challenge, participate in a fireside COMO Conversation on food security, and conclude with a four-hand dinner at COMO Beach Club. Each experience celebrates the beauty of Bali’s produce, the skill of its culinary talent, and the shared responsibility to waste less and nourish more.

The Mystery Box Chef Battle Challenge
COMO Beach Club will transform into a stage for culinary creativity as Colin McSherry, the Executive Chef of COMO Uma Canggu faces off against Chef Ami, MODENA Culinaria’s Resident Chef and Runner-Up of MasterChef Indonesia Season 10. With reef fish as the mystery ingredient, both chefs will craft authentic Balinese dishes using a zero-waste approach and MODENA’s advanced induction and convection appliances. High in energy yet grounded in purpose, the challenge celebrates craftsmanship and resourcefulness — qualities that define the new era of conscious cooking.
Chef Colin McSherry, Executive Chef of COMO Uma Canggu, shares, “The mystery box challenge and our collaborative dinner reflect what modern cooking should be — inventive, responsible, and deeply connected to place. COMO Conversation: Nourishing Beyond the Kitchen
Later that afternoon, COMO Penthouse will host Nourishing Beyond the Kitchen, a fireside chat addressing one of the most pressing global issues of our time: food security. Moderated by Sandra Pramitha, Outreach Officer of Scholars of Sustenance (SOS), the session will feature an engaging panel of leaders shaping change through advocacy, innovation, and hospitality.
The speakers include Vania Herlambang, Sustainability Advocate and Puteri Indonesia Lingkungan 2018; Winda Aulia, Sustainability Lead at MODENA; and Lelie Liana, Cluster Sustainability Manager for COMO Hotels and Resorts in Bali. Together, they will explore how collaboration across sectors can make access to safe, nutritious, and culturally meaningful food a universal right rather than a privilege.

Four-Hand Dinner: Taste Without Borders – A Zero-Waste Celebration of Land and Sea
On the evening of October 17th, the celebration culminates in a MODENA Culinaria–driven four-hand dinner at COMO Beach Club, led by Chef Ami, Resident Chef of MODENA Culinaria and the creative force behind MODENA’s culinary vision. This six-course experience — crafted by Chef Ami and Chef Colin McSherry — bridges Indonesian heritage with international flair, offering a dining journey that reflects artistry, innovation, and sustainability.
Chef Ami’s creations include Jumpa Jampi, Wirangi, and Ramoe Mantra, a signature dessert conceptualised by Chef Bella, Pastry Chef of MODENA Culinaria, each dish reflecting a deep respect for Indonesian flavours and storytelling through taste. Complementing these are Chef Colin’s globally inspired dishes — crab and squid ink linguine, fish Bouillabaisse, and grilled mackerel with tartar, cucumbers, chard bone, and shiso dressing.
Every course is paired with a story card, guiding guests through a journey that celebrates Bali’s land and sea, its cultural heritage, and the shared values of innovation and sustainability. Designed with a zero-waste philosophy and prepared with locally sourced ingredients, the dinner offers an elegant outdoor experience at COMO Beach Club — where creativity and consciousness come together at the table.

Chef Ami, Resident Chef of MODENA Culinaria, adds, “Cooking, to me, is a dialogue between tradition and innovation. Anggit Dwi Fahmi “Ami” Prachaya Ruangroj, known to audiences across Indonesia as the charismatic Runner-Up of MasterChef Indonesia Season 10, brings a distinctive blend of creativity, humour, and precision to every dish he creates. As Resident Chef of MODENA Culinaria, Chef Ami leads cooking classes, pop-up experiences, and culinary showcases that merge technique with storytelling.
