Kick the evening off at Temple Lounge with our bespoke Great Pyramid cocktail that combines gin, Campari, blood orange, peach, and pomelo for a refreshing of fruity and citrusy flavors with a hint of bitterness, creating a well-balanced and refreshing cocktail with herbal undertones. Then head over to di Mare for our five-course gala dinner meticulously crafted by di Mare's Executive Chef Joseph. Each course pays tribute to various Egyptian deities and the rich culinary traditions of the Nile transporting your palate through the vibrant flavours of the Middle East.
The feast commences with Freekeh, a vegetable medley of braised koro beans, heirloom carrots, pomegranate, and mint over a bed of nutty freekeh grains and topped with tangy sumac labneh. Next delight in our torchon of Foie Gras, accented by crispy duck cracklings and an Egyptian-spiced orange cardamom compote. Our seafood course spotlights Tagin Samak's “New Style'' showcasing scallops, prawns, and squid in a zesty tomato raisin fondue with pine nuts while our imported Wagyu MB6 filet mignon is served with truffled sunchoke puree, mushroom medley, and caramelized endive in a Pedro Ximenez sherry demi-glace. Finally, enjoy a little naughty sugar before you have to make your New Year resolutions with an ethereal Panna Cotta swirled with rose milk, adorned by an airy pistachio sponge, champagne gelee, and tangy hibiscus sorbet.
