With over two decades of global culinary experience, Chef Juntaro brings a masterful approach to traditional Japanese cuisine, underpinned by exceptional technique, thoughtful innovation, and unwavering dedication to his craft. 

A native of Shizuoka, Japan, Chef Juntaro's culinary journey has taken him to some of the world’s most prestigious kitchens, including Koko at Crown Melbourne, Waku Ghin by Tetsuya Wakuda in Dubai, and Nobu Melbourne. His artistry has been shaped by this international experience, complemented by formal training at the Perth School of Hospitality and Tourism. Specialising in Omakase, Kaiseki, and contemporary fusion cuisine, Chef Juntaro effortlessly bridges tradition and modernity, offering a dining experience that is both refined and revelatory.

Now leading the helm at Morimoto Jakarta, Chef Juntaro introduces a fresh culinary perspective to the restaurant’s celebrated legacy. Under his direction, Morimoto Jakarta is exclusively open for dinner service, presenting an elevated menu that celebrates the harmony of Japanese culinary heritage with global influence. 

A Masterfully Curated Omakase Experience

Chef Juntaro unveils a thoughtfully curated Omakase menu, meticulously composed to showcase the finest seasonal ingredients and the delicate artistry of Japanese cuisine. Each dish is crafted with precision and elegance, guiding guests on a sensory journey from start to finish.

Among the standout creations is the Wagyu Tataki, seared to perfection and elegantly paired with kimchi dressing, onsen egg, and a delicate nest of leeks. The Hokkaido Hotate Carpaccio delights with its fresh scallops, beautifully dressed with vibrant orange, pomegranate, and micro shiso, offering a refreshing burst of flavor. The Braised Black Cod, rich and tender, is complemented by a luscious sweet soy reduction, tofu, and greens, creating a harmonious balance of taste and texture. And the Grilled Wagyu Striploin MBS 7 takes center stage, accompanied by a fragrant pepper sauce, earthy shimeji mushrooms, broccolini, and garlic, promising a truly indulgent experience.

This exquisite nine-course Omakase experience is available at IDR 1,880,000++ per person, exclusively for dinner at Morimoto Jakarta. In addition to the set menu, Chef Juntaro presents a distinguished à la carte selection, allowing guests to personalise their experience while enjoying his signature creations.

From exquisite starters to indulgent mains, each plate reflects Chef Juntaro’s passion for purity of flavour and refined presentation. Delicately prepared Anago Chawanmushi, a savoury egg custard with conger eel and crispy chicken skin, sits alongside the refreshing No Nori, No Rice, a sushi-inspired medley of tuna, salmon, and hamachi enveloped in cucumber with tobiko and spicy mango.

Nigiri lovers can indulge in the Wagyu & Foie Gras, or the umami-rich Scallop with Uni Butter & Caviar. Sushi rolls include the decadent Ultimate Toro Roll and the indulgent Lobster Roll with spice and tempura crunch.

Among the mains, the King Crab Leg and Australian Lamb Racks – accompanied by caramelised miso onion and black garlic purée – stand as testaments to Chef Juntaro’s flair for balancing luxury with authenticity. For a sweet finale, the Young Coconut Custard with sake-roasted pineapple, coffee miso ice cream, and coconut hazelnut crumble offers a tropical reimagining of dessert.
