InterContinental Bali Resort Welcomes the New Director of Culinary with 10 Hands Dinner

This legendary resort in the Jimbaran area introduces a kitchen captain who will bring exciting changes to the dining and drinking scene within the resort.

InterContinental Bali Resort is pleased to announce the appointment of Marco Medaglia as the Resort's new Culinary Director. Marco's arrival on the Island of the Gods is expected to bring a new colour to the dining scene at the Resort.

Italian born Marco Medaglia, has built his career through stints at various restaurants in 23 cities in 13 different countries. He brings a wealth of experience working in opulent restaurants in Hong Kong, Paris, and Chiang Mai. He was also part of the opening team at the Palazzo Versace Hotel in Dubai.

Marco’s love of cooking was inspired by his grandmother. His grandmother was a chef at a local restaurant in his hometown. “When I was a child, I spent time at the restaurant after school, raiding my grandmother’s kitchen while waiting for my parents to pick me up. Seeing my nonna cooking day-to-day eventually inspired me to learn how to cook,” says Marco.

With 37 years of experience, Marco spent most of his career in the fine dining sphere with Mediterranean cuisine and international fare as his speciality. However, having worked at various restaurants abroad has taught him to appreciate Asian cuisines, especially Japanese and Chinese. He also picked up skills in cooking Middle Eastern specialities while he worked in Dubai and Egypt.

At InterContinental Bali Resort, Marco will oversee all food and beverage at the resort’s dining outlets as well as its in-room dining and banquet to meet the unrivaled standard that the resort has set. Between his busy time, he is also keen to help young talents excel.

An Exclusive Multicultural Dinner Event by Marco Medaglia and Team

On 20 January 2023, the InterContinental Bali Resort will hold a one-night dining event crafted by the new Director of Culinary and four talented chefs. The wine dinner event will take place at the newly refreshed Bella Cucina restaurant and will run from 7 p.m. onwards.

Marco Medaglia, the resort’s new Director of Culinary, will join forces with Romain Lefevre, Bella Cucina’s Head Chef and three rising stars from the resort’s culinary team: Nanda Vanles, Robi Wiryawan, and R.M. Abdul Abadaeni.

“The idea of creating this exceptional dining event is to give our guests the opportunity to enjoy the diversity of flavours presented by these five talented chefs. Each chef, with their different artistry and cultural background, will bring their best creations to the table, pampering patrons with a creative dining experience,” said Marco.

The six-course, intercultural dinner will feature six scrumptious dishes, each influenced by the chefs’ backgrounds. “The dining menu will be created by one Italian, one French, one Indonesian, one Chinese-Indonesian, and one talented Indonesian pastry chef. I believe this would become a night to remember for many food enthusiasts in Bali,” Marco added.
