A gastronomic collaboration with Asia’s rising star
From 16 to 18 June 2023, CIRE at Alila Villas Uluwatu will present an exciting collaboration with one of the hottest up-and-coming restaurants in Asia – Jakarta-based August, recently crowned winner of Asia’s 50 Best Restaurants 2023, American Express One To Watch Award.
Bringing together two passionate chefs and their unique culinary flair, the event will see Chef Sheandy Satria of Alila Villas Uluwatu team up with August’s Chef-owner Hans Christian to craft a stunning 10-course dinner tasting menu and a Sunday brunch.
A marriage of modern flavors and Indonesian influences is at the core of August’s DNA, whose elegant, contemporary restaurant in Jakarta’s Sudirman Central Business District has been steadily making waves since its debut in 2021.
Drawing inspiration from his travels and childhood memories, Chef Hans invites diners to immerse themselves in the stories behind his dishes, which champion fresh, local, and seasonal ingredients sourced from around the Indonesian archipelago. Chef Sheandy’s mastery at taking inspiration from local flavors and recreating them in authentic dishes using Western techniques provides the perfect match with inventive, flavourful results.
For the four-hands dinner, guests can look forward to savoring a series of snacks and appetizers such as Razor Clam Tempura, and Rabbit Rillettes with charcoal ‘cakwe’ and Alila garden chili jam. Flavors fresh from the sea include White Fish with lemongrass & ham broth and ginger flower, while mouthwatering meat dishes include Lamb Short Loin with caramelized galangal, tomato curry, and aromatic herbs – all impeccably and creatively plated.
Sunday brunch is a decadent yet leisurely affair starring a medley of lobster creations, beautifully prepared with the perfect balance of sweet, sour, spicy, and umami flavors.
