Umana Bali’s signature Mediterranean restaurant, Oliverra, unveils Oliverra Tables, a new collaborative dining series that celebrates Bali’s rich local produce and a shared philosophy of sustainability. Designed as a platform for cross-cultural dialogue and conscious cooking, the series brings together guest chefs, producers, and culinary visionaries to craft one-of-a-kind dining experiences grounded in local provenance and purposeful storytelling.

 

Conceived as more than a series of dinners, Oliverra Tables is a culinary initiative that welcomes chefs and artisans who share a respect for craft, sustainability, and cultural storytelling. Each edition will explore new themes and expressions — moving beyond presentation and technique to highlight how food can connect people, place, and philosophy

 

“Oliverra has always been rooted in the idea of connection,” says Ngurah Putra, Executive Chef at Umana Bali. “From our cliffside setting to the stories behind our ingredients, everything we do is intentional. With Oliverra Tables, we’re inviting other voices into our kitchen to co-create experiences that feel honest, personal, and purposeful.”

 

 

Highlights from the inaugural dinner include Chef Angga’s signature Charcoal Beef, layered with rosna sarma and mung bean. This deeply personal dish brings together the smoky Mediterranean cuisine with the earthiness of Bali. Its texture, richness, and quiet restraint make it a clear standout, anchoring the narrative of the evening with understated strength.

 

Guest chef Gunartha Tude presents a refined interpretation of market fish, paired with andaliman jus, coffee jelly, and ginger flower pickles. With sharp acidity and complex aromatics, the dish offers a fresh contrast and reflects Dome’s ingredient-focused, nature-driven approach.

 

“This dinner is an expression of who we are at Oliverra,” says Chef Angga. “We draw from the Mediterranean, but we’re grounded in the land and stories of Bali. The idea behind Oliverra Tables is about collaboration, blending perspectives to create something that reflects time, place, and intent.”

 

 

The dinner is priced at IDR 1,950,000++ per person, with an optional wine pairing at IDR 2,500,000++ per person. Each pairing, featuring selections such as Fantini Trebbiano d’Abruzzo, Ripoli Rossato, and Vigneti del Vulture Sensuale Moscato, is chosen to complement and elevate the character of each course, adding depth to the overall experience.

With future editions already in the works, Oliverra Tables will continue to welcome like-minded chefs from Indonesia and beyond, each bringing their own narrative while staying true to the values at the heart of Oliverra—respect for the land, the producer, and the plate.
