Jumeirah Bali is thrilled to announce the appointment of Alessio Nallino as its new Executive Chef, starting from the 18th of March 2024. Chef Alessio brings a wealth of culinary expertise, accumulated over 20 years in some of the world’s most renowned kitchens.
With a career that has spanned his native Italy, Switzerland, Australia, Vietnam, including a period at a Michelin-starred restaurant in Macau, Chef Alessio is poised to enrich the resort’s dining experiences with his distinctive fusion of Mediterranean and Asian cuisines. In his new role, Chef Nallino will oversee the annual and seasonal strategies for the resort’s culinary outlets, including Akasa Restaurant & Bar, Segaran Dining Terrace, Maja Sunset Lounge and the banqueting operations.
Chef Alessio’s culinary journey commenced in Switzerland in 2005, followed by a formative stint in the Maldives. After a decade in the Swiss Alps, he ventured to Melbourne, serving as a sous chef at The Grand Hotel in Richmond. His first foray into Asia was as a Sous Chef at Galaxy Macau from 2016 to 2018, where he contributed to the establishment’s fine dining acclaim, culminating in his recent role as Executive Sous Chef at Park Hyatt Saigon in Vietnam.
