For Chef Edy Santoso, the answer extends far beyond preparing exceptional food. Nourishment begins long before a meal reaches the table. It starts with the soil where ingredients are grown, the people who cultivate them, the care given to every living thing, and the responsibility of a chef to honour that entire journey.
After more than 25 years with Banyan Group, Chef Edy’s culinary career has taken him across Indonesia, the Middle East, the Maldives, and Southeast Asia, including formative years at Banyan Tree Bangkok, where he refined his understanding of authentic Thai cuisine. Yet despite decades of international experience, his philosophy has remained remarkably simple: the finest ingredients are not necessarily the rarest or the most expensive. They are the ones treated with heart.
“People often think nourishment begins when food is served,” Chef Edy shares. “I believe much earlier. It starts with the people who grow the ingredients, the way we care for them, and every decision we make before they even enter the kitchen.”

That belief shapes every culinary experience at Refresh, Garrya Bianti Yogyakarta. While authentic Thai flavours remain true to their roots, Chef Edy champions Indonesia’s local produce with equal conviction. Seasonal herbs, native spices, and locally grown ingredients are not substitutes for imported products. They are an expression of Indonesia’s remarkable biodiversity and culinary heritage, waiting to be celebrated through thoughtful craftsmanship.
For Chef Edy, choosing local is also about choosing responsibility. Garrya Bianti Yogyakarta works closely with the help of PPT, Faculty of Animal Science UGM, to foster 3 women-led farming communities in Sleman, creating opportunities for locally grown produce to become part of the guest experience while supporting the livelihoods and knowledge of those who cultivate the land. Likewise, every egg served at the resort comes from cage-free hens, reflecting a belief that quality and care should extend beyond the kitchen to the wellbeing of the animals and communities behind every ingredient.

“A truly memorable meal is never defined by luxury ingredients alone,” he says. “It is defined by integrity, knowing where your food comes from, respecting the people behind it, and allowing every ingredient to tell its own story.”
