From September 26 to 28, 2024, from 6:00 PM to 9:00 PM, guests are invited to venture on a remarkable gastronomic journey as Chef Blake Thornley takes the helm at the award-winning Uppercut Steakhouse. This exclusive event features an exquisite 7-course tasting menu that beautifully encapsulates the essence of Bali's finest culinary traditions, brought to the heart of Surabaya. Complementing this culinary journey, Mozaic’s expert Bar Manager, Billy Wirawan, will offer a curated mixology experience, artfully blending traditional flavors with innovative cocktail techniques.

The course begins with a tantalizing Chef’s Amuse: a Yellowfin Tuna Tart, delicately infused with the rich, aromatic tones of Base Gede. Following this, the Mother of Pearl Tartare presents a refreshing combination of pomelo and a delicate garden gel, capturing the bright freshness of the tropics in every bite. One of the evening’s standout creations, Foie Gras Snow, reimagines the traditional delicacy with the subtle smokiness of eel, earthy beetroot, and the complex, citrusy notes of Kluwek, an indigenous Indonesian spice. For the main course, the Wagyu Beef takes center stage, accompanied by perfectly roasted potatoes, tangy pickled radish, and freshly ground green peppercorns. To conclude this unforgettable culinary adventure, an array of Petit Fours will provide sweet confections that serve as the perfect finale to the evening.
