JW Marriott Hotel Surabaya, in collaboration with the French Embassy in Indonesia and Institut Français d'Indonésie (IFI), recently hosted a special edition of its Flavors Beyond Borders series with “Le goût de France – Taste of France, j’adore!” on October 8, 2024. The event featured a Michelin Intimate Dinner, bringing together Michelin-starred Chef David Galienne and JW Marriott Surabaya’s Executive Chef Rio Abednego. Guests enjoyed an exquisite 5-course French culinary experience at Pavilion Restaurant.

As part of its Flavors Beyond Borders series, a four-hands dinner took place at JW Marriott Hotel Surabaya, highlighting a commitment to connecting people through global culinary experiences. The event celebrated French cuisine—recognized as an Intangible Cultural Heritage by UNESCO—by blending its authentic flavors with local ingredients for a distinct fusion. Guests enjoyed an evening of cultural exchange, savoring a menu that merged French heritage with Indonesian influences.

“We are honored to collaborate with the French Embassy and Chef David Galienne to bring an authentic French gastronomic experience to Pavilion Restaurant,” said Alex Ryu, General Manager of JW Marriott Surabaya. “This event captures the essence of Flavors Beyond Borders, as we celebrate world cuisines and look forward to many more culinary collaborations that bridge cultures and connect people through flavors.”

The Pavilion Restaurant transformed into a garden-inspired setting for an exceptional dining event that echoed the ambiance of Chef David’s Michelin-starred Le Jardin des Plumes. The evening featured a masterful menu crafted by Chef David and Chef Rio, blending French sophistication with locally sourced ingredients. This collaborative culinary experience highlighted the chefs' commitment to excellence, offering guests an unforgettable taste of world-class cuisine in a setting that perfectly complemented the gastronomic journey.

In a culinary showcase that captivated the guests, both chefs presented a meticulously curated menu blending French sophistication with local flair. The evening began with Chef David’s Tartare de Crevettes et Saint-Jacques, a refreshing prawn and scallop tartare, setting the tone for an unforgettable dining experience. Chef Rio’s Bouillabaisse, a nod to French tradition made with locally sourced ingredients, followed, further elevating the event. The main courses, featuring Chef David’s Canard en deux cuissons—duck prepared with two expert techniques—and Chef Rio’s perfectly seared Fillet Mignon, struck a strong note of the chefs' expertise. The dinner concluded with Chef David’s signature Teurgoule, a traditional Normandy dessert, offering a sweet homage to his roots.

The event drew an esteemed crowd, including the French Ambassador to Indonesia, Mr. Fabien Penone; French Honorary Consul, Mr. Han Jayanata; Director of IFI Surabaya, Mrs. Sandra Vivier; and other distinguished dignitaries, making it not only a gastronomic triumph but a celebration of international connections. The evening highlighted the enduring strength of cultural diplomacy, enhancing ties between France and Indonesia through a shared appreciation of fine cuisine and camaraderie.
