On the note of inviting Chef Khun Ploy to cook up her dishes in Surabaya, Yudi further elaborates on how Thai cuisine as a whole encompasses a wide array of dishes with a complex yet harmonious blend of exciting flavors. Although Indonesian food is synonymous with strong flavors, Thai food has a different flavor profile compared to traditional Nusantara cuisine. In this particular buffet ensemble, Chef Khun Ploy has meticulously curated a menu that emphasizes the richness of Southeast Asian natural resources through the skillful use of fresh seafoods and exotic herbs that is unique to Thai foods. For example, using corianders, lemongrass, kaffir limes leaves, and Thai mints, which are distinct characteristics of Thai cuisine tastes.

To start off the meal with a punchy-flavored salad, find the signature Som Thai Gai Yang (green papaya salad with grilled chicken) and the fresh Larb Hed (mushroom salad with a combination of spicy dried chili and herbal shallots, coriander, Thai mints, kaffir lime leaf, and a splash of lime) to first open your palate. For guests opting for a warmer soup or tom options to begin their meal, Chef Ploi cooks up classical flavors of Tom Kha Gai, Tom Yum Hed, or Tom Yun Goong soup that may be the most familiar for Indonesian gastronomes.
