Rawon is a legendary dish from East Java. However, to present a unique flavor, Chef Heri Purwanto combines richly spiced rawon broth with tender kikil. Cooking the kikil for 2-3 hours yields a soft texture. To enhance the savory broth, shrimp broth is added, resulting in a delightful taste. Accompanied by warm white rice, shrimp crackers, and salted eggs, this rawon kikil dish is priced at Rp 125,800 ++.

"We use kikil to provide a different taste that has never been made before. Usually, beef is the main ingredient for rawon, but we try replacing it with kikil," says Chef Heri P., Executive Chef of Grand Swiss-Belhotel Darmo.

The next menu is Bintoro fried rice, a renowned favorite. What makes this fried rice unique is its combination of traditional fried rice with flavorful grilled ribs. Spicy food enthusiasts can request their preferred level of spiciness to experience a tantalizing sensation. For only Rp110,800++, culinary enthusiasts can enjoy a satisfying serving of Bintoro fried rice.

Indulge your palate with the delicious Pan-seared salmon served with fragrant coconut rice, sambal matah, and sautéed vegetables. The salmon is fried using a special technique, resulting in a crispy exterior and perfectly cooked interior. Fragrant coconut rice and fresh sambal matah offer a unique and enticing flavor. Pan-seared salmon is priced at Rp137,800++.
