Say hello to the new Chef de Cuisine at Al Nafoura, Chef Ahmad Moussa! With over 10 years of experience in Middle Eastern countries, Chef Ahmad Moussa brings with him a wealth of knowledge. Before flying to Jakarta, he was working his wonder at Banana Island Resort Doha by Anantara.

Honoring his Lebanese roots, Chef Ahmad Moussa elevates the fare to a level of fine dining. Fantastically, he can do it without leaving the traditional wisdom behind. Instead, Chef Ahmad incorporates modern cooking technique and combines international ingredients with seasonal local ingredients.

There are two kind of appetizer to start your journey; cold and hot. The cold mezzeh allows you to taste the true flavor of the local ingredients. It includes hommous, moutable, tabouleh, Turkish labneh, babaganous, and fatoush salad. To make it even better, the cold appetizer is served with soft and warm bread. Meanwhile, the hot mezzeh introduces the wonder of simple cooking process. It highlights four types of Samboussek with different fillings, and a falafel.

Stealing the spotlight is the braised lamb shank ‘ouzy style’ as a main course. It is served with oriental rice, assorted nuts, and yoghurt coriander sauce. The meat is very soft and flavorful, with a hint of spices that changes everything.

There is another choices if you don’t prefer to eat lamb. The Salamun Ma Zatoun, or charcoal grilled salmon, is another star you should not miss. The grilled fish is served with olive oil, cumin, fresh coriander, and lemon juice.

During this rainy season, Chef Moussa also recommends traditional soups. The Soup Adas especially, offers a great health benefits. This vegetarian soup is made from red lentil with cumin powder, and served with crispy pita bread and lemon wedges. Other soups with seafoods and lambs are also tasty due to its flavorful stocks.
