Some of the most remarkable dishes from the Brunch Degustation Menu are the caramelized Norwegian salmon with Lemon Bush Tea infused honey glaze, served with sautéed soba noodles, asparagus and carrot fricassee, Imperial Lapsang Souchong infused beurre blanc topped with a crisp squid ink pearl. Another prowess is the Tournedos Rossini, pan-seared beef tenderloin served with truffle potato purée, vegetable fricassee, caramelized onions, steamed vegetables and porcini mushroom sauce infused with Red of Africa Tea. Tea Gastronomy also allows some daring tea pairings, such as the Chicken Roulade, a sous vide rolled chicken leg stuffed with mushroom, spinach and pine nuts wrapped in smoked beef bacon served with roasted potatoes, vegetable fricassee, sun-dried tomatoes and Red of Africa Tea infused porcini au jus.

The TWG Tea Brunch Degustation Menu is priced at IDR 350,000 Nett. An additional of IDR 250,000++ is applicable for free flow white wine, sparkling wine or prosecco. Available only on weekends from 10 am to 3 pm at TWG Tea Salon & Boutique in Pacific Place
starting from 20th January 2018.

LOBSTER SALAD
Poached Sulawesi lobster tail with caviar, served with fresh avocado, beetroot, radish, orange segment, cherry tomato, green and red apple compote, wild berries drizzled with Love Me Tea infused vinaigrette.

BARRAMUNDI WITH SAMBAL MATAH
Pan-roasted barramundi fillet drizzled with Garden Party Tea infused “sambal matah” served with steamed edamame, sautéed enoki and shimeji mushrooms, served with a choice of buttered potatoes or coconut ginger rice.

TOURNEDOS ROSSINI WITH TRUFFLE POTATO PURÉE
Pan-seared beef tenderloin served with truffle potato purée, vegetable fricassee, caramelized onions, steamed vegetables and porcini mushroom sauce infused with Red of Africa Tea.

Stuffed mushroom tortellini served with shaved black truffle, sautéed shimeji and sous vide egg in creamy truffle sauce sprinkled with Matcha.
