During this time, Nusantara will be taking temporary residents at Raffles Jakarta and they dish up Rantangs Takeover Jakarta to your doorstep.
Nusantara is a spin-off of the awards winning Locavore Restaurant by Chef Eelke and Chef Ray. Implied from the Javanese word for “archipelago”, Nusantara is an authentic Indonesia restaurant offering a unique version of the country’s rich culinary heritage helmed by Chef Putu.
Rantangs Takeover Jakarta will be led by the talented Chef Ray Adriansyah from Nusantara by Locavore. He and the culinary team from Raffles Jakarta will pamper your taste buds with their classic Indonesian dishes from all over the nation. The key ingredients to make this exceptional dining experience in your home is how they combine the freshest of local, seasonal components and ethical meats in nuanced and artisanal recipes.
Food delivery will be packed and stored in Rantang (a traditional stacked food container for bringing food). With a couple of items that been wrapped safely in aluminum foil and condiments stored in containers. Expect the dishes to be exotic, earthy, spicy, aromatic, and full of flavors.
Inside the rantang, you will find many exquisite dishes such as Cumi Hitam (baby squid cooked in its own ink), Tumis Paku (stir-fried fern tips with papaya flowers, oyster mushroom, shallots, garlic and chillies), Udang Asap (prawns marinated with ginger, lemongrass, sweet soy, chillies, kaffir lime, and grated coconut, wrapped and cooked in banana leaves over open fire), and Semur Lidah (ox tongue braised with sweet soy, shallots, chillies, lemongrass, star anise, cinnamon, nutmeg, coriander seeds, and candle nuts).
The food journey just didn’t end there, as there’s still another exotic dish Timbungan Ikan which is fish marinated in classic Bali spices, tomatoes, and kemangi leaves cooked and served inside bamboo. To be more festive, you can add on IDR 190,000net for Bebek Tanah which is a half duck marinated and stuffed with earthy spices and cassava leaves, wrapped in palm leaves and slow-baked in clay over an open fire.
The rantangs also feature Nasi Daun Jeruk and condiments like Sambal Ganja, Sambal Beberuk, and Acar Salak to spice things up. To cool down your appetite, Klappertaart (steamed coconut cake served with coconut custard and young coconut meat) will be the perfect choice to end your meal. Rice, condiments, and dessert are all included in the set menu.
