Chef Lam Wei Hung Brings Hong Kong Flavors to MORAZEN Surabaya
At the heart of this celebration is the presence of Chef Lam Wei Hung, an esteemed culinary expert from Hong Kong, renowned for his mastery of oriental cuisine. Fondly referred to as Shi Fu A Hung, Chef Lam will take guests on a flavorful journey with a carefully curated buffet menu featuring over 30 authentic dishes, including iconic favorites like Peking duck, Teochew porridge, dim sum assortments, breaded fish with salted egg, and various styles of fried rice. Each dish reflects the rich traditions of Hong Kong, crafted with precision and passion.
Adding a deeper layer of cultural significance to the celebration is the traditional yee sang ceremony, a hallmark of Chinese New Year festivities. Yee sang, a vibrant salad made with fresh, finely sliced vegetables, raw fish, and special sauces, symbolizes prosperity, luck, and unity. Guests will gather around to participate in the joyous lo hei ritual, tossing the salad together while voicing their wishes for the coming year. “The higher the toss, the greater the fortune,” shared Chef Lam, who will personally guide the ceremony. “Yee sang is more than just a dish; it represents hope and togetherness as we step into a new year.”
