On the tenth edition of Salon Bali’s Purnama Dinner, the signature dining restaurant is cooking up something different. This time, instead of having a culinary collaboration with talents outside of the restaurant, our own talented Sous Chef Radit and Mixologist Borty will take charge of the evening and promise to put out a dining experience like no other on Saturday, 15 June 2019, featuring six courses of delectable dishes and a set of amazing cocktails to pair.

Set to bring the discerning palates of Seminyak diners to an elevated take on Balinese and Indonesian culinary heritage, the June edition of Purnama Dinner will highlight Salon Bali’s signature contemporary touch on the authentic flavours of Indonesia that is inspired by Chef Radit’s childhood memories of traditional Balinese dishes using indigenous products, spices and fruits of the season. Meanwhile our talented Mixologist Borty has created a set of tippling concoctions that highlight the less-used and recycled products—sustainable cocktails, if you will.

Before joining the Hotel Indigo Bali Seminyak Beach’s team of kitchen wizards, Chef Radit, had honed his skills at several resorts and beach clubs around the island, including InterContinental Bali Resort. In 2018, he was awarded with silver and bronze medals at Salon Culinaire, after competing with other chefs from all around the island. Fast forward to now, Chef Radit is ready to showcase all his gastronomic skills at the June edition of Purnama dinner for the very first time.

Our Mixologist Borty started his career in 2010, bartending at a number of five-star properties in Bali. In 2015 he won the Sofitel Bali Nusa Dua Mixology Competition and was one of the Top 10 finalists at Diageo World Class Competition. In 2017, Borty joined the bar team here at Hotel Indigo Bali Seminyak Beach and since then had become the Beverage Manager and become the brain behind the resort’s signature Balixology cocktail concept.
